French Onion Soup in the Crockpot and Toll House Pie

My friend Steph gave me this amazing recipe for French Onion Soup, done in the crock pot. Not only is it extremely easy, but WONDERFUL!!

French Onion Soup

The Ingredients.

--2 cans of beef broth (I used the box of beef broth from Wegman's and I added more than it called for)
--3 T butter
--2 yellow onions (I used 3 onions...it depends on size of onions and how many onions you want in your soup)
--1/2 T granulated sugar
--1/4 cup cooking sherry (or dry white wine)
--1/2 t kosher salt (you might need more if your butter isn't salted)
--slices of brown rice bread (or french bread)
--gruyere cheese (swiss could work too)

The Directions.

--heat your crockpot to high and plop your butter in to start melting
--slice the yellow onions into rings
--break up the onion slices with your fingers, and rub them around in the melted butter
--add the beef broth, sugar, salt, and sherry
--cook on high for 6-8 hours or low for 10-12. It takes a while for the onions to get translucent and pliable

before serving:
--preheat oven to the broiling option
--If you have oven safe bowls-place bread in the bottom-place cheese on top.

--Place bowls in oven until cheese is melted and turns a golden color.

Ladle soup over the bread/cheese.
What about dessert???

For dessert tonight I made a pie that I grew up with my mom and aunt making.

Toll House Pie

Ingredients:
2 eggs
1/2 cups flour
1/2 cups white sugar
1/2 cups brown sugar
1 cup melted butter
1 6 oz chocolate chips
1 cup nuts (I used pecans)
1 9" unbaked pie shell

-Beat eggs until foamy.
-Beat in flour, sugar and brown sugar.
-Blend in butter, chips and nuts.
-Pour in shell.
-Bake for 1 hour at 350 degrees.
-Serve warm with ice cream, cool whip or whipped cream.

Easy Pie Crust

Ingredients:
Iced Water
2 cups flour
1 teaspoon salt
1/3 cup crisco

-Mix by hand- flour, salt and crisco in a bowl.
-Add a few tablespoons of iced water (4-6)
-Form into ball.
Roll out the dough.

Place dough into pie plate. Using your fingers press dough, as seen in picture below.
