Chocolate Cupcakes and Peanut Butter Icing
Recently my mom saw an episode of Georgetown Cupcakes where they talked about one of their popular flavors: chocolate cupcakes, with peanut butter chips and peanut butter frosting.
So, to keep things simple I picked up a basic chocolate cake mix. If you're a couponer, you likely can always find great deals on cake mixes.
Make the cake mix according to the package.
Mix in a bag of peanut butter chips. I found a bag of peanut butter and milk chocolate chips. It was the perfect combination, as the milk chocolate melted in the cupcakes and the peanut butter chips softened.
Using an ice cream scoop spoon the cake mixture into cupcake cups, in a muffin pan.
Bake according to package.Now it's time to frost the cupcakes!!

3/4 teaspoon pure vanilla extract

Place the confectioners' sugar, peanut butter, butter, vanilla, and salt in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium-low speed until creamy, scraping down the bowl with a rubber spatula as you work. Add the cream and beat on high speed until the mixture is light and smooth.
Cool for 10 minutes, remove from the pans, and allow to cool completely before frosting.
